Quinoa and Roasted Sweet Potato Salad Recipe 🥗 


Ingredients:

- 1 cup quinoa, rinsed

- 1 1/2 cups water

- 2 medium sweet potatoes, peeled and diced

- 2 tbsp olive oil

- 1 tsp salt

- 1/2 tsp black pepper

- 1/4 cup fresh cilantro, chopped

- 1/4 cup green onions, sliced

- 1/4 cup pumpkin seeds

- Juice of 1 lime


Instructions:

1. Cook quinoa in water according to package instructions. Let it cool.

2. Preheat oven to 400°F (200°C). Toss sweet potatoes with olive oil, salt, and pepper. Roast for 25-30 minutes until tender.

3. In a large bowl, combine quinoa, roasted sweet potatoes, cilantro, green onions, and pumpkin seeds.

4. Add lime juice. Toss to combine.

5. Serve warm or chilled.
