1. Roasted Sweet Potatoes

Ingredients:

  • 800 g sweet potatoes, peeled and cut into 2 cm cubes
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1 tsp paprika (optional)
  • 1/2 tsp black pepper

Instructions:

  1. Preheat oven to 200°C
  2. Toss sweet potatoes with oil and seasoning
  3. Spread evenly on a baking tray
  4. Roast for 30 to 35 minutes, turning halfway
  5. Serve hot

2. Mashed Sweet Potatoes

Ingredients:

  • 900 g sweet potatoes, peeled and chopped
  • 3 tbsp butter
  • 120 ml milk or cream
  • 1 tsp salt
  • 1/2 tsp cinnamon (optional)

Instructions:

  1. Boil sweet potatoes in salted water for 15 to 20 minutes until soft
  2. Drain well
  3. Mash with butter and milk
