Quinoa and Kale Salad Recipe 🥗
Ingredients:
- 1 cup quinoa, rinsed
- 1 1/2 cups water
- 2 cups kale, chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 cup sunflower seeds
- 1/4 cup dried cranberries
- 1/4 cup feta cheese, crumbled (optional)
- Juice of 1 lemon
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions:
1. Cook quinoa in water according to package instructions. Let it cool.
2. In a large bowl, combine quinoa, kale, cherry tomatoes, sunflower seeds, cranberries, and feta cheese.
3. Add lemon juice, olive oil, salt, and pepper. Toss to combine.
4. Serve chilled or at room temperature.
