Farro and Roasted Vegetable Salad Recipe 🥗
Ingredients:
- 1 cup farro
- 3 cups water
- 1 zucchini, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 red onion, chopped
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/4 cup fresh parsley, chopped
- 1/4 cup feta cheese, crumbled (optional)
- Juice of 1 lemon
Instructions:
1. Cook farro in water according to package instructions. Let it cool.
2. Preheat oven to 400°F (200°C). Toss zucchini, bell peppers, and red onion with olive oil, salt, and pepper. Roast for 20-25 minutes until tender.
3. In a large bowl, combine farro, roasted vegetables, parsley, feta cheese, and lemon juice. Toss well.
4. Serve warm or chilled.
